good enough to eat -- truffle mac and cheese.


When I throw a party, I tend to spend far too much time worrying about everyone else having a good time that I forget to do so myself.  When it comes to dinner parties, though, I think I've solved my problem: I simply do everything that I possibly can in advance.  This means that baked pasta dishes are perfect.  Mac and cheese is always a crowd-pleaser, and being able to just stick it in the oven when my guests arrived was a major plus.  I altered this much-adored recipe just slightly by subbing in truffle butter for the regular butter and can say that it's one of the best decisions that I've made in a long time.  When combined with acidic tomatoes and crunchy homemade breadcrumbs, the flavor was elevated beautifully and the dish lost all resemblance to kindergarten blue-box fare.
